Georgian Crystal is a hardneck, porcelain variety with 4- 6 large cloves per head. It is a variety that originally comes from the country of Georgia. It has white wrappers some purple striping and the cloves are covered in a mottled purple striping. It has a crisp, clean garlic flavor when it is raw and a sweeter flavor when cooked although it does maintain it’s garlic flavor quite well when cooked. Makes a great roasted garlic with it’s large clove size but it is wonderful in any application. Georgian Crystal is a reliable grower and is very cold tolerant. it also has an excellent shelf life.
